Fruit application review

Apple and pear puree: preparation comes first.

Core, seed and peel decisions belong to the fruit, not to a mango destoner. Define that front end before selecting the downstream equipment.

A general fruit-preparation review, not a claim that a specific apple or pear machine, recovery rate or capacity has been supplied.

These requirements describe the puree ingredient and its equipment interfaces. The final food formulation and production process have their own scope.

The front end is not a mango destoner

Apples and pears need their own preparation decision. Stems, cores, seeds and damaged tissue must be removed, retained or diverted according to the product definition. The mango destoning and flesh-recovery assembly shown elsewhere on this site is not an apple corer, a pear peeler or a pome-fruit preparation line. Treat the front end as a separately reviewed duty.

  • State whether peel is retained, removed or only trimmed.
  • Define the core, seed and stem boundary in the finished product.
  • Do not size a pulper as though whole apples or pears could enter it directly.

Refining sets the edible particle and fibre boundary

After preparation, a two-stage pulper and refiner can screen the flesh. Apple and pear cultivars differ in pectin, fibre, maturity and cell structure; pear stone cells can produce a gritty observation that a single aperture number does not describe. Compare the prepared feed, the accepted puree and the reject stream from a representative sample.

  • Agree the coarse material and fibre that should remain.
  • Keep screen aperture separate from a measured Dv90 or sensory result.
  • Record the cultivar and maturity behind every trial sample.

Downstream duties are selected, not automatic

A single-fruit apple or pear puree may pass from refining to a buffer, thermal treatment and filling without mixing or homogenization. Add mixing for a defined recipe, deaeration for an air-related requirement, and homogenization only when a product trial justifies the change. Thermal process and package validation remain product-specific.

  • Choose treatment and filling around the preservation route.
  • Keep mixing, deaeration and homogenization as separate decisions.
  • Define the receiving package before sizing the final connection.

A defensible apple and pear scope

This site can review pulping, transfer, treatment and filling around prepared fruit or a defined prepared puree. An apple or pear peeling, coring and trimming machine, an exact recovery figure, a capacity guarantee and utility values require their own equipment and trial review. This page does not present a complete pome-fruit line as already supplied.

  • Use the existing equipment schedule where a front end is retained.
  • Ask for a preparation drawing and a representative feed sample.
  • Separate assembly checks from product and package acceptance.

What to send for a useful quotation

A short description of the fruit, preparation and intended product is enough to begin. The following details make the equipment review more comparable; they do not all need to be known at first contact.

  • Apple or pear type, cultivar, maturity and incoming condition.
  • Peel, core, seed and trim boundary, including whether these leave as separate streams.
  • Target product, texture or fibre observation, preservation route and package.
  • Useful puree quantity, operating hours and any retained equipment or connections.

Questions about this application

Can you supply a complete apple or pear line?

The current whole-fruit production package on this site is mango. Apple and pear peeling, coring and trimming equipment requires a separate review. Downstream pulping, buffer, thermal and filling equipment can be scoped around a defined prepared feed.

Will a finer screen remove all gritty pear texture?

Not necessarily. Screen choice interacts with cultivar, maturity, fibre and the working arrangement. Assess a representative sample and the rejected fraction; screen aperture is not a measured particle distribution or a sensory guarantee.

Do apple or pear puree need homogenization?

No. Homogenization is included only when a defined product requirement justifies the additional shear. A single-fruit puree can be refined, treated and filled without it.
