Texture is a set of requirements.
A product can be smooth enough for one application and unsuitable for another.
Separate the questions
Describe mouthfeel, visible structure and flow behavior separately. A single adjective cannot tell an equipment supplier which fruit fractions matter.
- Name the structure the customer wants to retain.
- Identify unwanted skin, seed fragments or coarse fibre.
- Connect each requirement to an agreed observation or test.
Use a reference without treating it as a method
A reference sample helps align expectations, but its storage and preparation can change its behavior. Agree how the sample will be handled and compared.
- Record sample identity and condition.
- Assess it at the intended application temperature.
- Use measurements alongside sensory or visual comparison.
Preserve the intended structure
A smaller measured particle distribution is not automatically a better ingredient. Refining and added shear should be evaluated against the intended use.
- Compare untreated and proposed-treated samples.
- Track desired fibre as well as removed material.
- Confirm behavior after the customer’s downstream step.
