Viscous-product heat treatment
A formulation and texture specification with relevant product properties and the intended preservation objective. Product variation must be included in process evaluation.
What should leave this duty?
Product treated within a validated system boundary, with retained quality and the agreed transfer conditions for filling or subsequent cooling.
Discuss this equipment- Product flow passage
- Heating / holding boundary
- Outlet monitoring and downstream interface
Variables to compare
Review heat-transfer arrangement, flow distribution, pressure limits, residence behavior and fouling observations for the actual product. A qualified process definition is required.
Where selection can go wrong
No single time/temperature setting applies to all fruit purées. Equipment selection, process validation and final package validation are related but separate decisions.
Cleaning & inspection
Include fouling access, drainage, seals, inspection and cleaning verification across all product passages and any holding arrangement.
Installation & process interfaces
Agree heating/cooling utilities, pressure relationships, monitored points, diversion or hold decisions and the downstream hygienic or sterile boundary.
Evidence for the proposal
Ask for duty-specific calculations, mechanical design limits, control philosophy and the responsible validation documents; do not treat an illustration as an approved process.
